Squash is one of the most exciting vegetables to grow as they come in so many shapes and sizes. This homemade soup is perfect for the colder weather and is lovingly seasoned with fresh herbs, Maldon salt and topped with crispy foraged mushrooms. Delicious!


Join us as we show you how to make a delicious squash soup, perfect for the colder weather. @xfmgladstone takes you through the step by step process of creating this comforting dish. Start by baking the peeled squash, red onions, and garlic with olive oil, thyme, Maldon salt, and pepper.

Add the softened vegetables to a pan with vegetable stock, chopped tomatoes, and seasonings. After cooking for 10 minutes, we'll blend the soup to perfection. Finally, we'll top it off with crispy foraged mushrooms, pepper, and a final sprinkle of Maldon salt. Don't miss this amazing recipe for a warm and hearty meal.
